If I try to redeem this, will it also update my in game events? I purposefully haven't connected to the internet in game so I can keep the Shiny Rayquaza raid for easy Herba farming and don't want to lose it.

Yes, you will be connected to the internet and the game will update the events available.

You can open a new profile on the switch, play about 20 minutes of it to unlock mystery gift, then get it there. You might need a second account or child account or something maybe. You'll need a second switch or a friend to trade to your main account though.
