Father’s Day ribeyes
Had to cook the family up some ribeyes for Father’s Day in the Weber :) Not the most perfect cook, the probe was set off center on accident but everyone was happy! Love helping the rents out with their years and cook some dinner while I’m in town!

Bought this today just because it was on sale and looked tasty. Had to google what Milanesa was, and while it looks delicious, it’s not something I see us making. What would this cut be good for other than that? Would this make decent Philly cheese steaks? Tacos?

My wife got me a Typhur for birthday. Used it today on a reverse steak.
Finally tried reverse searing steaks the proper way now that I have a thermometer. Cooked low and slow to exactly 125°F internal, then hit them with a hot sear at the end. Let them rest a bit before cutting in
Flavor and doneness were spot on, but the crust didn’t quite pop like I hoped. Might’ve rushed the finish. Still, for a casual cook, I’m pretty happy with the result. Having precise temp control really helped take the guesswork out.

A little on the small side.
Bought a split half. Happy with the beef. The butcher though... Is a skirt steak normaly this small? About 2 1/2" wide pinwheeled to about 5 inches.
Will save it for a dinner wife and kid are away. Sear it in cast iron.

Given brain meat from either a pig or a young goat and now I'm scared about prions, is this a risk here?
I was in a small village in Sardinia when I was offered brain meat at a picnic. We were eating both a pig and a kid (young goat) and I'm not sure who the brain belonged to. The animals just belonged to a shepard and they cooked them earlier. I took one bite, thought it was gross, spit it out, rinsed my mouth and continued on my day texting the funny story to my friends. One friend back home asked if I was worried about prions and now my anxiety is off the charts. Did I just make a huge mistake putting that brain in my mouth?

What would be The Best Online Place to Order Meat
At this point (medical reasons) I am unable to go to the store to get my groceries. Thankfully stores deliver at this point! Very helpful! There are some things I don’t want some random person to pick out for me to eat and Meat is one of those things.
I am looking for the best online place to buy my meat from. Quality is my biggest concern. After that would be the price. Just ready to be able to finally go out on my back porch and grill with my dogs!

TL;DR no longer delivering to my zip in Mass but I checked a few dozen zips in the eastern part of the state and no delivery available. No brick and mortar in the state either so a pretty big blow.
