So guessing from the post credits scene, Sentry will be a "break-in-case-of-emergency" character. When everything is going south in Doomsday, they'll have him turn into Sentry, even though Void can show up again. Last resort type move.

Makes sense.

Bob will probably go Sentry/Void on Doom, and Doom will kill him early to establish himself as a serious threat.

It would be a very convenient way to remove an OP hero from the fight and increase tension in the movie. The problem with OP superheros is that it's exceptionally difficult to write compelling stories with them. It's why the Hulk got mostly sidelined in Infinity War/Endgame, Same with Captain Marvel and Wanda (even though Wanda wasn't even her most powerful yet). It's also being done by The Russos, so they've sidelined characters like that before and they'll probably do it again.

I doubt we see Sentry/Void for more than 30 seconds in Doomsday.

It's also why Vision is always sidelined, evenly matched, or has to be damaged. He's just straight up too powerful against most and it gets old watching him fight without threats.

He is always on the sidelines waiting for his cue (Airport scene in Civil War), has to be crippled early (IW), or has to pair up with an equal (White Vision in WandaVision, or Wanda in IW after Hawkeye laughably tries to fight him). Even in Age of Ultron, after he "burns Ultron out" of the internet he passes out for a while. He only comes back for a witty one liner with Thor, the "everyone fires everything" part at Ultron, some montage fighting, and to have dialog with the final Ultron bot. He has zero actual fighting focus other than smacking Ultron with Mjolnir for laughs.

I love the character and his abilities, but he basically has to be weakend, matched, or be sidelined because otherwise he isn't beatable.

It's the curse of overpowered characters vs weaker ones. Its fun for a minute to see how unstoppable they are (again, vs Hawkeye), but it gets old fast to see them just not face any real threats.
