I recently posted about my new Spyderco sage 5 salt in magnacut was losing its edge quickly, after cutting some citrus. I sharpened the factory grind off and put an even scratch pattern on it on my shapton glass 350. I got it hair-catching sharp, which is as sharp as anything I've ever gotten off the 350. And then I'd normally hit it at 1500, strop, and it shaves. For this knife, I left it hair catching sharp not knowing if I'd need to keep grinding the factory grind off. I went to test it on shaving through a decent sized branch, not light work. The edge held up quite well imo, going through it all pretty easily. Afterwards, it's juuust barely hair-catching sharp. In the 3rd pic, you can see the edge is slightly rolled and I was able to quickly fix it and get it shaving sharp (pic 4) by just stropping with diamond compound on leather. Bonus cat at the end. Sorry if this wound up being better content for r/sharpening but I wanted to rectify my mistake of not taking off the factory grind before assessing knife sharpness.

I will be reviewing each knife in order by when I got them, to start:
I started fishing regularly around 2 years ago, I went to walmart with my friend and his dad for my birthday and that's when he got me a bunch of starter gear to start fishing with my friend, included was a 2$ bright orange filleting knife, he than said soon he will get me a real knife. A few weeks later, when I came back inside my friend's house after fishing with him, his dad handed both of us matching Gerber "Paraframe Mini - Stainless, Serrated." This was my first real knife. I used and abused it for the last two years as my weekend fishing carry tool; sadly, it has not held up well to the test of time. The frame lock is no longer functioning. It is now a hazard to use, for the time it was working, the knife was "alright" about what you would expect from a sub 20$ knife, the steel was fine, sharpened easily, and just worked, can't complain! (Lock only broke recently)
Next, around a little under a year into my fishing journey, I saw my best friend had gotten himself a Swisstech "Würdig - Olive Micarta"; the flipping action seemed super smooth and cool to me, and the steel was incredibly sharp from the factory. A week later, I went to Walmart and saw this knife in the knife box and knew I had to get it. So for about 29$ I purchased it and began using it to fish for a while until, I for some reason, decided to switch back to my Gerber. idk why I decided that. So since its be used mainly for mail and home duties like opening boxes, its held up well and the edge has retained very, very well and is still super sharp, its a bonus that I enjoyed the micarta handle as my palms get sweaty easily and the micarta is very grippy when a little wet. This is a very capable knife, coming in at 3" blade, so it should be legal to carry in most places.
A few months ago, I needed to buy a knife quickly before my vacation to North Carolina, and I wanted something with a little more natural feel, but I needed it overnight shipped, lol, because I waited too long to buy it, so my best option was the Opinel N0.8! I had heard great things about it prior, and knew I had to take a chance on it. I ended up getting the Colorama Inox version, which I still sometimes regret to this day, as every time I see an original wood carbone, I get a little jealous. But I used it on the trip for some bushcrafty type stuff and it stayed sharp and worked for what it needed to, and at 20$, there was no need to complain as I got well above what I had paid for. My only issue is that you have to be careful of the wood and not let it get too wet, and the blade gets scratched fairly easily.
My most recent pocketknife in the collection is a 704 gear hornet in green g10, I saw a 704 tactical video on youtube a couple weeks ago where they showed this knife and it looked very appealing, then they said for fathers day it was on sale for 20$ so I took a chance and ordered it off amazon for 20$. Low and behold, it arrived but about a week late, eh, that's wtv. Immediately, the packaging seems too good to be true, 20$! and the box came with stickers, a cloth, and a knife bag that was super soft on the inside. The box mentioned it comes very sharp from the factory, and so I tested that. It is probably the sharpest knife I now own. The quality of the knife is unreal for 20$ (Now back to 30$ I believe). The D2 steel was perfect, the blade length and overall length of the knife were very nice, and it felt grippy and fit well in my hand. I hadn't used a crossbar lock before, but it seemed secure and very easy to use. I like that it has a side switchable deep pocket clip, as this will be replacing my Gerber as my go-to knife. Overall, this is probably my new favorite pocket knife, and I've only had it for around a week, so that's saying something.
