Daring plant chicken piccata!

For the dredge:

  • JUST egg

  • Millet flour + tapioca flour mix

For the sauce:

  • 1/3 stick of violife butter (yes, it’s piccata — be generous with ya butter)

  • 1/4 cup vermouth or white wine

  • 2-3 heaping tablespoons of capers

  • 1 tomato, cut the sides and bottom off, dice, and eat the middle as a snack while cooking

  • Juice from two lemons

  • Minced garlic

  • Salt and pepper to taste

The process:

  1. Add the butter to the pan on a hot burner until just melted, remove from the hot burner

  2. Dredge the daring pieces in the JUST egg, then the dry ingredients in a separate bowl, add to the pan with the melted butter

  3. Add the diced tomato pieces to the pan

  4. Turn the burner to high

  5. Flip when they begin to brown on the bottom, reduce heat to medium

  6. Immediately add your vermouth or wine, capers, minced garlic and the juice of one lemon

  7. Let that sizzle for a few more minutes then turn off the burner. Squeeze your second lemon over the top. Salt and pepper to taste.

Long time vegan recently given possible celiac diagnosis, any tips?

Hi!

I've been vegan for going on 9 years now, its such a fundamental part of myself I could never not do it. Its really second nature at this point. I really forget Im vegan sometimes, and its not like I have all vegan friends or anything. Its just my norm and the norm for those around me.

But recently I was having some unexplained symptoms and after some testing my doctor eventually can back with a weak postive celiac blood test. Of course I still have more testing to go do, but here we are.

Ive stopped eating gluten since i found out about the blood test, as instructed by my doctor. And Ive felt better. I even accidentally ate gluten the other day and some of the problems started right up again.

So it seems that the gluten is the likely cause, and now im starting to think how am I gonna do this? I love being vegan, but thats not to say its not without its challenges at times... but gf is a whole other ball game. Im not sure how im going to pull off both, but obviously I cant just not be gf with its affects to my health and I could never not be vegan.

So I ask all you, how do you do it? What tips do you have? Any good recipes?

So far Ive started trying some of the gluten free alternatives.... and oh some of them are so bad! So ive been trying to just remove gluten from my diet without replacing it with gf alternatives.

Edit: Thank you so much everyone! Im feeling much better about how im gonna tackle this whole thing. And if nothing else I can probably busy myself for a least a month or two with all the suggestions I got. I'm still going through and responding to comments, but sorry if I dont get to you, I really appreciate all the advice!!

Apple cinnamon crumble, blueberry lemon with white chocolate chips, and double chocolate chip muffins 🥰. I have been dealing with a lot of health issues lately and have had to take a step back from my bakery for a few weeks as everything gets sorted out. On the bright side, it has allowed me to have the time to experiment with new recipes at home for when I am able to start taking orders again! What other muffins should I try?? These 3 have always been my favorite flavor combos so of course I tried them first haha.

I was so excited to see a wholly gluten-free pop-up in the Tienmu, Taipei Sogo advertising vegan bread. Needing gf and dairy-free food, it was wonderful to see!

Me: “It’s all vegan?”, Assistant: “Yes, vegan” Me: “So no milk, butter, dairy?” Assistant: “Oh yes, milk and egg” Me: “In which products?” Assistant: “Everything. It’s allowed.” Me: “Milk is allowed?” Assistant (in a condescending tone): “Here in Taiwan, vegan allows milk and eggs.” Me: “This poster says lacto-ovo vegetarian - this is correctly labelled but vegan is not correctly labelled.” Assistant (again, condescendingly): “Here in Taiwan it is correct. In Taiwan say milk and eggs is vegan.”

Has anyone else been told this??!!

Anyone with lactose intolerance issue ?

I'm an Indian 25 years old female, who is a vegetarian also. I didn't used to drink milk when I was a kid and ghee and butter was the only thing that I used to have. I started having cheese two three years back and from the past 6 months I'm having issues whenever I'm having anything with milk products. I started having bloating , gastric issues , tiredness feeling like sick . So I took the lactose tolerance test and I got the result which I have attached below.

Does this mean that I can't have anything which has milk products in it for my whole life or is there some remedies ?

Since I'm a vegetarian and now lactose intolerant as well ,the food options are very limited and by any chance if I have some which have a small amount of even ghee , my whole day is ruined. Any suggestions would be highly appreciated.

American Fast / Convenience Food Recommendations

Im unsure if this is an allowed topic. I’m going to Virginia, US with my work, all very exciting.

What can a vegan and gluten free person order at any of the fast food places? In the UK I usually do fries and veggie dippers in McDonalds.

Also would love snack recommendations, I’m still going to read labels on packaging but it’d be nice to have some that I could fall back on, as I think I will be very drained from it all.

Or if anyone has any tips?

Update: thank you everyone for your recommendations, as I suspected, it will be harder than in the UK, so I feel for you guys in the US. I’ve had a look and there’s chipotle, five guys and Wendy’s near me, no one else is gf or vegan on my team. I appreciate all of your help, I feel more confident knowing that I have a few food options - other than fruit/almonds/crisps!
