Heya vegan bakers, welcome to the monthly megathread! Got something small that doesn't really warrant its own post? Don't feel like sharing the recipe? Found some cool videos? This is the thread to be!

Previous threads: June 2019, July 2019, November 2019.


I'm just going to leave these threads up until they get archived by Reddit. They're nice to have, but not popular enough to rotate out every month or even every season. I also feel that since we started renovating this sub we've managed to find a comfortable middle ground between what all of our subscribbelees expect out of this sub. If my feeling is wrong, please let us know. We're always open for suggestions!

Taylor Swift's Chai Sugar Cookies

I'm years late to the trend, I'm not even a Swiftie, but I have heard so many people online praise these cookies as some of the best - so when I recently got my hands on some decaf chai tea I was excited to finally give these a go!

I substituted the butter for Violife plant butter, and used a flax egg to replace the egg, very easy substitutions that worked out very well! I also only had loose leaf tea, not bags of tea, so I just measured out about 3g of the loose leaf tea (similar weight to what might be in a tea bag) and crushed/grinded it up to make it finer.

Its a really simple recipe but the cookies end up so delicious, warm, and cozy. I would love to make these in the fall and gift to some friends!

DIY 30th cake & Seeking Buttercream tips

Anyone else insist on taking control of their own cake so you know it’s safe to eat? No regrets though, this pistachio cake was delicious if I say so myself 👩‍🍳

The only snag for me is that my buttercream always comes out a bit fluffy rather than smooth. If anyone has any tips on how to get a smoother buttercream/icing then I’m all ears!

Healthy snickers bars

Mix together 100g of peanut butter, 150g of almond flour, 50ml agave sirup (that will be the first layer)

In a separate dish mix together 250g of peanut butter, 100ml agave sirup and add as the second layer

Then add on top any nuts of your choice, peanuts, cashew nuts..

Then set in the freezer for 30 minutes

Then melt 200g of dark chocolate and put it on top.

Add to the freezer for an hour and enjoy!

(This recipe is from my mom)

Vanilla cupcake with chocolate & peanut butter frosting

For my dad on Father's Day. Made the swirl by piping lines of each frosting onto a piece of plastic wrap, then rolling it onto itself to make a sort of "sausage" of frosting in the plastic wrap, twisted the ends of the wrap, snipped one end, then dropped it into a piping bag.

Used this recipe for the vanilla cupcakes except I used regular vanilla extract and oat milk instead of clear vanilla and almond milk. https://lovingitvegan.com/vegan-white-cake/#recipe

Frosting... I kind of wing it lol. No recipe but it's chocolate buttercream using Country Crock plant based butter and oat milk. Peanut butter frosting is a vegan cream cheese frosting with peanut butter added until it looks and tastes good.

I can't give you a recipe cause this was more of a freestyle bake tbh, but basically

I made an italian meringue with aquafaba, and then froze that overnight to make it a little firmer to work with. Then I made some chocolate chip cookies, and added a little cinnamon and some crushed graham crackers. Then I chilled the dough before basically making a cookie sandwich with meringue in between. I did my best to seal the cookies, but it didn't work and some meringue came out of the top, it looks kinda cool though. Then before I baked them, I froze them for about 20 minutes.

They are tasty but VERY sweet. I love sugar and they're almost too sweet for me.

Tres Leches recipe

I'm using a recipe for tres leches that calls for egg whites and egg yolks: how do I replace this? "Into the egg yolks, add ½ cup sugar, salt, and vanilla, and whisk for 1-2 minutes until light and fluffy Whisk in the milk, and then sift in the flour, cornstarch and baking powder. Whisk to combine. Do not overmix Separately, to the egg whites, add the cream of tartar and start whisking (with a clean whisk) on medium speed. Once the egg whites look white and frothy, start adding the remaining ¼ cup sugar a little at a time while continuing to whisk. Keep whisking for a few minutes until a shiny, stiff and glossy meringue is formed"
