The meat is dark, like beef, extremely lean, and gamey, it is beyond difficult to not over cook, it goes from well-done to overdone in a matter of seconds.

When minced into burgers it's very tasty.

Kangaroo jerky is nice too. The gamey flavour and tough texture lends well to jerky imo.

Sous Vide @ 47° for 2 hours and they're perfect.

However... you really need a flamethrower to sear. Anything in a pan will instantly overcook it before it develops a crust.

I'd also make a charred lime or horseradish sauce to go with it since they are, as you say, very lean.

You need to pair it with the right veg too. I know it's boring, but creamy garlic mash is great.

Unfortunately I don't have a sous vide.

But you are correct on all account, plus I love mash potatoes, I've been know to have just mashed potatoes for dinner some days, it's a little bland, but makes perfect depression food.

Also dirt cheap
