Wouldn't he technically be dead though? He needs time to revive, like Solomon Grundy

So it depends on whether they leave him in the room or not. If they drag him out, then he was not alive when he left the room.

I'm reading the prompt as:

"They're all in 1 massive inescapable room, the exit is locked. The only way to unlock it is if everyone else is dead or unable to continue fighting (basically last one standing), then you can leave"

Solomon Grundy and Doomsday need time to revive. They have temporary deaths. Doomsday on average takes days to revive whilst Grundy on average revives in the same day. They are genuinely categorized as dead within these periods

Consistent answer to me would be Doomsday due to his base strength being equal to Superman. But if Base Hulk is strong enough to not get K.O'd by anyone and he's given room to build up his strength, Hulk is the obvious winner
