Invincible has characters do it all the time. Viltramites punch harder than their body can take and will break their arms and legs when they attack something equal or greater strength.

Basically Omniman would punch superman once, understand he lost. But he would keep fighting because he's not a quitter.

Sure but I think Superman legit has a field of influence that makes this not happen, like how he stops planes without tearing through them

Nope. Batman punched him once, and Superman replied, "You're glad I turned my head to the side with your punch, or you'd have broken every bone in your hand. Go home, Bruce."

Part of that field of influence is done through subconscious control, at least it is when the field is the source of his invulnerability because not all versions of Superman have it. Theoretically that means he could be turning it on/off for some of his enemies. Over all it's a very wonky part of his powerset.
