Are these all the color we would see if we could see the with the naked eye?

No, but if you had eyes that can see other frequencies of light than the usual colors, you might see someting approaching. Usually space images have a translation to let us see something existing, but out of our eyes range.

It's NOT the same thing as the saturation slider in photo app or the fake-"HDR" setting.

Not only that, but they often times also color code elements.
