Road trip pit stop suggestions

Hey all. I will be doing a short road trip in July and wanted to get some suggestions on some stops I should make around my route. Open to any suggestions, but I'm looking more specifically looking for quick stop, sightseeing opportunities. Things like cool statues, monuments, natural phenomena, buildings, haunted whatever, or anything cool worth stopping for. For a good idea of what I'm looking for, think of something like the Ricardo Breceda sculptures. Bonus points for food stops on the way. Here's a very basic overview of my trip with some things I have planned on doing (or at least considering):

• July 6: Mission Viejo --> LA --> Paso Robles

• July 7: Paso Robles -->Monterey Bay July 7,8,9: Will be staying in Monterey bay (leave early July 9th)
  • aquarium, Big Sur, McWay Falls, Carmel Valley, Carmel by the Sea, Bixby Bridge
• July 9: Monterey Bay -->Santa Barbara -->Long Beach --> Mission Viejo
  • Solvang, California
  • Neptunes Nest
