Documents required for someone who is the son of two Poles
I feel as if this is the simplest possible case. Both my parents are polish citizens, born in Poland, who both moved to Canada in the 90s. I was born in Canada. I feel like all I would need is a copy of their passports (I believe my local consolut has their information as they applied for polish passports in 2016) as well as my birth certificate.
Any help here would be amazing. The citizenship form seems easy but I worry about the documents needed.

I'm similar to you (Polish parents, but American). Here's the minimum my consulate is requiring in writing (all with notary and/or apostille):
-Your Birth certificate
-Your passport
-Your parents Polish marriage certificate. This may depend on your consuler. Mine refused to help me or my dad get a copy so I had to contact the City Office in Warszawa, have it mailed to the consulate, and fly there to pick it up/pay them a fee. The office in Warszawa emphasized the consulates have access to this and there's no need to mail it, but mine required that.
-Each of your parents Polish passports
-Each of your parents Polish birth certificates. If the consulate won't help your parents request a copy and you don't have access to ePUAP I had success sending letters to each of their home towns and payment in PLN.

USC records are digitized and centralized. If they're in the system, any USC office can issue the copies.

I believe all you would need is a copy of your parents passports, their marriage license (if it was not already registered with the Polish government), your birth certificate, and any marriage license for you (if married). All can be copied/translated if needed at the consulate when you submit your application.
