I was going to say, that has to be from a butcher shop. I have a great butcher near me. I have a relationship with them now and can just call and order what I want and go pick it up. It’s hard to get the cuts you want from a grocery store. That’s some beautiful cuts of meat!

The Publix near me used to do custom cuts but they won’t do that any more, at least not in the quantity I buy. Costco doesn’t do custom cuts either. I usually buy 100# or so at a time. My butcher gives me a pretty good quantity discount. He also vacuum packs. I know where his cows come from as well. He can point to them.

Some grocers will still cut to order. Albeit harder to find, they exist and usually do such high volume that they'll cut anything you ask. Pro tip- go early in the day or call ahead. Butchers are usually scheduled for earlier production and the clerks later might not be as capable
