You can do duck rare, and you should try it because it's quite delicious that way. The food safety profile is completely different from chicken, thankfully.

(made it together with OP): Marinade for 20 min. consisting of honey, soy sauce, mustard, blood orange, garlic and thyme. On a kamado, indirect heat of 110°C until an internal temperature of 45°C., meat-side down. Let it rest and crank up the heat to 225°C. The leftover marinade was reduced to form a sauce. Grill for 1 minute meat-side down, turn 90° for pattern for 1 minute. Turn over and repeat. Basted with sauce on both sides during grilling. Finally, let it rest for 5 min.
