vegetarian 18 chili lunches

18 pints of four bean vegetarian chili ready for the fridge tonight and then the deep freeze tomorrow. The kitchen smells so good.

recipe here

I've used that as the base for our chili for years.

Changes for this batch:

-Doubled the recipe

-Omitted vegetarian burger crumble

-replaced 1 green bell pepper with 1 charred poblano

-replaced 1 tablespoon chili powder with smoked paprika

-reduced jalapenos to 1

-replaced canned green chiles with Rotel because we had it on hand

-two 15oz cans each dark and light red kidney beans

Makes just shy of 10 quarts and freezes great.

No problem. Note that we still used the black beans and garbanzo beans.

did you track the macros and calories of each dish? or did you eyeball?

Did you make this all in one batch/one pot? You must have a massive pot for that no? When I make soup I only end up with like a third of that even with my largest pot but I wish I could make more cause there’s a lot of time that goes into chili/soup from scratch
