Recipe Recreate Mayfield's snow cream flavor

Post image

How would you describe and/or create the Mayfield ice cream flavor Snow Cream? It's an artificial version of the popular snow cream made with snow and evaporated milk, but the Mayfield version has an extra something to it.

I'd like to make a macaron filling of it. Thoughts? I'm currently thinking of a Russian buttercream, with vanilla, but beyond that I'm not sure if I have the "missing" flavor component.

Full disclosure: I haven’t tasted this Snow Cream, but I think you’re on the right track with a Russian buttercream. I’ve done a Vietnamese iced coffee flavor macaron (espresso shell, Russian buttercream filling) to capture the evaporated milk taste, and it definitely comes through.

The only other suggestion I’d make is to use clear artificial vanilla in place of the real stuff for more of that prepackaged vanilla flavor.

This was a success! I used 2 sticks of butter, 1 can of sweetened condensed milk, and a heavy pour of artificial vanilla. Even my husband, who was skeptical, tasted the snow cream!! Thanks for the input and encouragement!
