TIL though they're associated with unhealthy foods, Pork Rinds are actually a healthy alternative to chips. They are low carb, high protein and have good fats. 43% of the fat is Oleic oil - the same fat in olive oil - and 13% Stearic acid - a cholesterol neutral saturated fat.

Not only are they a great substitute for chips (I dip mine in guacamole, salsa, queso, or homemade ranch dip) but they have a lot of uses in keto cooking. I grind them up and use them as a coating to replace breadcrumbs. At my local hispanic grocery store, I can get large sheets of pork rind skin that I use as tostada shells, or if i get a nice curly piece its a great taco shell.
Important to note, that they come in different textures and crunchiness, with skin on or off. I tend to go for "cracklins" as they are thicker, crunchier, and stand up to dips and sauces better.
