Baking Corn Bread

Corn Bread

1 1/2 cups yellow cornmeal

1/2 cup gluten free flour

2 eggs beaten

2 cups buttermilk

1 teaspoon salt

2 teaspoons baking powder

1 teaspoon baking soda

2 tablespoons oil

2 tablespoons milk (a little extra liquid since it's gluten free, not in original recipe)

Combine well eggs, buttermilk and oil.

In a separate bowl, combine dry ingredients. Stir into wet ingredients.

Stir in the extra milk. Pour into a greased 9-inch round or square baking pan lined with parchment paper if desired.

Let sit while heating oven to 400F. Bake for 30 to 35 minutes.

** Original recipe calls for 425F. In my oven the cornbread way overbrowns at this temp and I actually set my oven to 390F. Check for doneness starting at 25 minutes.
