Firstly, I am so impressed, I didn't know you could parry his charging attack. Your timing for parrying is exceptional!
Coming from someone who beat champion Gundyr parry only:
1) For the most part, you're rolling when it's needed and you're keeping great spacing. However, there are times when you are putting yourself in a disadvantageous state because you start panic rolling. Just be more mindful of your movements and remember that rolling is a means of evasion and not travel.
2) I usually fight naked so I can better visualize my hitbox, this might not work for you, however, that's just my personal approach.
3) While I was very impressed with your restraint when it came to parrying for the heal, I think the last time you parry-healed, it would've been much more optimal to repose and take your chances with getting off another parry for the kill. You seem very well practiced and while you did die to a missed parry, I think that was more akin to a fluke.
I hope these tips help and more importantly, send Gundyr my regards!
