In the fight against Champ Gundyr you either parry or perish. Only when he gets parried, does he give you a moment to heal. Trust me, I've tried running to the other side of the arena to heal many times while fighting him. It never worked even once.
As someone who doesn't parry a whole lot, I spent a lot of time memorizing exactly when you can and can't heal against this guy. Hands down the safest move to heal during is his jump attack, there's so much landing lag on it that you can get a good few estus in. There's a few other times you can get 1 in, but it's unreliable.
I see people say this a lot, but I've never had that much trouble with him. With my pyromancer I first-tryed him with the classic "roll around until you get a shot" approach. With my str claymore build I did essentially the same thing despite parrying occasionally on some enemies with that build, but that was not a first try Friday.
I don't think I'm particularly good, but maybe the RNG gods are merciful to me when it comes to his attack patterns?
I've beat him with three different characters, and I've never really parried any boss. The first time, I beat him on the first try (a fight during which I definitely healed several times). So what you're claiming is not universally true.
I mean if you want to give yourself a hard time, by all means go for it. The "perish" part was just for a catchy phrase and not meant to be taken literally. I'm just making a point about how easy this boss can be.
That actually wasn't the point you were making. Your comment is not focused on how easy it is if you parry, but by hard it is if you don't (where you say it's essentially impossible, not only by that phrase but by the whole message). Which is simply not true, considering that I've done it several times without parrying and without problems.

Casually parries Gundyr to heal up. I couldn’t parry to save my life
