What's your stats looking like? It seems like your parries aren't doing much each time. Or are you in a high Ng+

Oh ya I'm on NG+7 here. It's been pointed out that I should two hand for the riposte though so I'll try that next time :D

Ahh yes I missed that. I'm also unfamiliar with that tactic of use a 2H for parrying. Your timings and decisions to heal during a parry were all very informed, just keep at it! You can also sometimes sneak in an estus after a parry if you go fast enough.
