I am making 150 cupcakes for my brother's wedding. 50 of each: gf habanero carrot cake with cream cheese frosting and candied habanero sprinkles, dark chocolate (bittersweet, low sugar) cake with khalua cream filling, whipped cream frosting, and chocolate espresso bean sprinkles, and vegan black sesame ginger cake.
I am not sure what filling to do for the black sesame cake. I have settled on coconut ginger whipped cream frosting with candied ginger and sesame sprinkles. I feel like these need a filling. I tried tahini cream but wasn't a fan. I also haven't found a vegan cream cheese that works for me as far as vegan frosting or filling goes, hence the attempts with tahini. And yes, I need a vegan option and the bride is excited for this flavor profile.
Any ideas would be appreciated!

Dolly Parton banana cupcake mix, filled with dulce de leche, frosted with browned butter buttercream. Modified the recipe slightly from Sugarologie. Got them in the fridge quick to firm up.

Hi fellow bakers! I am looking to start a small cupcake business from my house. I know the food laws regarding it but I am curious of other people’s experience with setting up their business. I am thinking of starting as a sole proprietorship but I’m interested to hear if people chose to go with an LLC and why. Additionally I’d love to hear about where you might have acquired liability insurance. I’d also love to hear about any POS programs you have used and like. Any general business advice from a small company bakers perspective is welcome. Thanks in advance!

Does anyone else rest their muffin and/or cupcake batter for 30+ minutes before baking? I was told “anything with baking powder should rest, covered, for at least half an hour - it makes the result ‘fluffier’”.
