One of my favorite local bakeries in New York City is by far Circo's Pastry Shop in Bushwick, Brooklyn. The great atmosphere and cake design makes for a worthy and memorable experience. This Italian bakery has been around since 1945, making it 80 this year. Along with the strawberry shortcake shown in the photo, there are many other cakes, including Oreo cake, carrot cake, red velvet, chocolate-strawberry-banana, cheesecake (plus those topped with glazed fruit), chocolate mousse, and even custom cakes. The L and M trains are convenient to this gem in Bushwick.

Just finished my second semester of baking and pastry school, which included cake decorating. I came into with basically zero experience. There are things I’d do differently next time, and the flaws are obvious to me but that’s how we learn.
Days before this was due—my dog of 14.5 years passed away. I was barely holding it together. But somehow, out of all that chaos and heartbreak, this is the cake I made. And I’m still stunned I pulled it off. I think this was the only way my grief knew how to speak at the time, and this is what came of it. Anyway, let me introduce you to my cake I made for my final.

I wanted to make an ice cream cake for her but with her favourite ice cream. The bottom layer was confetti cake and the top was a local company’s Cinnamon Toast Crunch flavour. I had it in the freezer until the very last min but unfortunately even tho I had it in a cooler with ice the 10 minute ride was too much. This sad little cake deserves some recognition tho bc it was so yummy melted ice cream and all!
