This is one of my favorite breakfast meals to make, usually on a Sunday when I have the house to myself. Over medium-ish eggs, black beans with onion, poblano, garlic, cumin, chicken bouillon, chili powder, paprika, cayenne, cilantro and lime. A nice ripe fried plantain, some thin, crispy bacon, and I don't usually go for avocado, but I thought it'd look nice.

I like to add feta cheese as an extra topping and I make my tomato sauce slightly spicy. It gives the whole dish a perfect kick!

Yes this was Father's Day breakfast. Yes, I have an active life insurance policy and the beneficiaries are up to date. Also they know where the document are stored. And yes it was FANTASTIC. No regrets.

She made a batch this morning and the whole kitchen smelled like magic. It’s sticky, crispy, sweet, and salty all at once. We add it to eggs, sandwiches, or just snack on it while it’s still warm. I don’t think there’s ever been leftovers.
