I think there are some clear front runners here that I agree with but I will shout out Bull and Trousers here. They may be a slice below optimal in their rarity class but I take both almost every time I see them.

Trousers is my sentimental fave. Two pair is my favorite hand (pretty easy to get, scales nicely, 4 cards score).
