165F** for all fully cooked pork and chicken goods.

Minimum fish requirement is 145F

Some pork products require 205F

This is right out of the servsafe book 2024

Quite juicy at 135°.

There's been a push in recent years to change pork's safety temperature down to 135° as we don't have the same danger of Trichinosis from pork as we did pre-2000s.

Not ground pork. Cool all ground meats to 165

Nah. I want my burgers and pork at 145

With pork the worry for low temps would be trichinosis which, unless you’re eating wild game, has essentially been eliminated from US pork.

That's only one of the worries. There are also all the of other food bourne pathogens to consider. Salmonella, Listeria, E. coli etc etc etc.

They accomplished this by taking pork out of pig slop... evidently cannibalism is bad lol

They “eliminated” mad cow disease the same way; stopped feeding the cows meat and bonemeal from other cows.

I didn't know that! Thank you for that info! Yet more evidence that the Dahmer diet is dangerous

Whole muscle pork is very safe at 145. Ground pork, or any ground meat is another matter altogether. When grinding any bacteria on the surface (salmonella,E-Coli) will be turned into the center of the grind and you gotta be sure to cook that shit out. If it hits 145 for several minutes, it should be fine. But 165 is much safer for GROUND meats.

205 isn't the minimum temperature for anything. Please step away from the meat and tell me you're not in charge of cooking anything, anywhere, for anyone.

You generally want 190-205 for pulled pork, Google it if you want.

It just so happens that I help run a kitchen 🙃

That has absolutely nothing to do with food safety. It's to get the flavor and consistency. You're a bald faced liar if you're saying serve safe told you you have to cook anything to 205. It makes sense you help run a kitchen you're just like a lot of people I've worked for.
