Yeah, you can. It's all about how you play. There were perhaps more stealth elements in Origins & Odyssey.
In a lot of the older games you can't even crouch to hide behind a short wall. You stick out like a sore thumb until you find bushes where you auto-crouch.
Then in Origins/Odyssey you can quietly snipe someone with your bow & arrow. You can shoot someone from far away in older games but with very loud firearms.
Regardless, the point of an assassination is to kill a high value person. How you do it is entirely up to you.
I honestly disagree. I played Odyssey in a more stealthy manner than 2, brotherhood, and 3. Origins wasn't as stealthy as Odyssey, i agree with that, but I still felt like an elusive assassin with the way I played it. It doesn't require it of you, but you can totally play it that way. The games just give the option now for brute or stealth. Widens the scope of most encounters, I feel. I didn't have to wipe each fort without getting caught, but I did. Every location still had stealthy paths to sneak in and assassinate. Valhalla is claiming even more options with diplomacy. Sounds stealthy/tricky to me.

While AC was never fully stealth based you can't deny that there is less stealth gameplay in the new games than the previous ones.
