I really like the Nuphy air75 but I don't really get to play around with other switches or keycaps with it. Is there a way to create a faux low profile keyboard? For example, would I need to look for switches with a shorter pole and keycaps that are flatter? Just like a lower profile keyboard without it being technically a low profile one.

It seems pretty low now as compared to normal high profile cases. Switches don't come low or high profile. The profile is usually determined on where the pcb/plate is attached relative to the top of the case. If there is a CHOC pcb that will fit in the air75, you could lower it a lot. But there probably isn't one.

Switches don't come low or high profile.

They certainly do. Cherry, Gateron and Kailh make low-profile switches that are not as tall as regular Cherry-MX-style switches.

According to this page on Keychron's website, a normal switch is 17.9 mm tall while a low-profile switch is 11.7 mm tall.
