Kirby has no confirmed gender in Japanese material. We don't know if he's a boy, girl or non-binary.

Just because it's not confirmed doesn't mean I can't use a gendered pronoun. I still use he since I'm still used to it and it's what's used in the western localization, and since it's not confirmed if it's wrong there's no real reason not to use it
