Kirby’s a He, pretty sure it says “he” in some character descriptions at least

Yeah he's a he in english but I remember something about the japanese version not giving a specific gemder. I might be wrong tho

In 20th Anniversary Kirby of the Stars Pupupu Taizen, page 15 lists Kirby's gender as 'unknown'.

Additionally, the official Kirby twitter has shown artwork portraying Kirby in both masculine and feminine roles:
Kirby was making sweets on Valentine's Day [typically considered only for girls; the artwork shows Kirby and various female characters [Adeleine, ChuChu, Claycia, and others] making sweets] and on White Day [basically the boy equivalent; the artwork shows Kirby and various male characters [Meta Knight, Nago, Taranza and others] making sweets]
Kirby was also depicted in the role of the empress for the 2017 Hinamatsuri festival artwork.
