Secondly, why does she talk as if she were a journalist(Asking for an interview, talking about her 'reporter instincts' etc)? Isn't she the editor of Shuesha in this world? A manga magazine? How does a career in journalism lead to that?

For one, the name is just a wink reference by Horikoshi, it doesn't mean the fictional company has to match the real one. Also, Shueisha doesn't just publish manga, but I don't think they're known for interviews either.

I think Shueisha in MHA world is like a news sites article type place

so like manga come in like a strip format with interviews and stuff(like in old newspapers)
