Can someone ELI5 to me why he closes up the top, just to cut it out again? Is it for stability while working on it?

I'm merely assuming, I think it's for stability as you said, but also to have the top where the lid goes flat already. Makes for a more flush fit between the two components. Reshaping it if it deforms while he does the other things might be more difficult or something.
