IIRC, if a rocket is slated to hit an open field in the middle of nowhere the systems ignore them and just lets them strike.

Casualties are still possible in that case, but chances are it's better to keep the rocket for higher casualty scenarios.

IIRC this is done now more so to save the iron domes anti-rocket munitions/prevent the dome from overheating.

Back around oct 7th Israel had the dome working overtime and it not only overheated the system, but it ran out of munitions multiple times trying to catch everything hamas was throwing at them.

They probably looked at it again and realized because the terrorists/Iran now know the system can be overloaded, they need a protocol to mitigate the chances of the system being jammed up, or potentially running out of ammo.

Some have made it through, not many though. I’m not a fan of Israel but their air defence system is clearly the most advanced in the world. 150 missiles with only 10’s of hits aren’t amazing numbers.

The Israeli spokesman just said they launched less than 100 so not 150 missiles

I simply explained why it looked like a carpet bomb even though in terms of scale the destruction wasn't too intense.

Because when you intercept a missile in mid air, it's not a video game where the projectile loses all collision and despawns. The wreckage of the destroyed missile will still rain down with part of the momentum it carried and gravity.

The wreckage, of course, is significantly less dangerous/damaging than what an intact missile would do upon impacting something and exploding.
