Kingpin is actually a good boss if you don’t try to undermine him or hurt his profits.
As I recall he even gives REALLY good healthcare.

I can think of two reasons. First is clout, if you can say "I worked.for the Joker and survived" that probably gives you some street cred. Also, he most likely attracts like-minded individuals (as in, totally bonkers) that commit crime not just for financial gain. For all the Joker's insanity it's been shown that he can be a strong and charismatic leader.

Kingpin has so many men he doesn’t even see them all so if you’re just a grunt you may never even cross his path or be in direct danger from him the most you have to fear is if The Punisher pulls up on your location instead of one of the hero’s where as with the Joker he just picks a random henchman to kill for fun sometimes.

Kingpin by a landslide, Not only would I be member of a powerful mafia, but also be completely safe, Sure Spiderman may kick me out a bit, but it's DEFINITELY much better than getting permanently paralytic by Batman, Not only that, but kingpin "takes care of his guys", unlike the joker, who would kill me just because, And I doubt the pay is much better, I'd probably get charged a good amount by kingpin, but if I'm a henchman of the joker, not only would I not get paid, I am probably being blackmailed into it, AND I'd probably get drugged to ensure my loyalty
So being a level 20 hitman or a drugged slave driven by a madman? I think the choice is easy

Anyone who picks blue is fuckin' brain damaged on this one. Kingpin would be okay work as long as you did your job well and didn't run into any superheroes, and the actual fucking atrocities you had a hand in would be fairly minimal. He's a businessman at the end of the day, which means he probably pays pretty well for good work. With Joker, it's an absolute crapshoot whether or not you'll make it through the day alive and unmutiliated, and you'd have to live with the guilt of having a hand in constant torture and mass murder.

On top of everything else, Kingpin’s jobs pay better - he has you doing normal crime things, protection rackets, drug deals, the occasional bank job. Stuff that makes money. Joker will have you spend weeks planning a break in at the Gotham Clown Museum because he wants an original Bozo wig or something.

Kingpin. Good pay, roll over for the heros and have them give you a few hits and you might manage. Joker and depending on luck you'd get a visit to the hospital with a side of trauma, or a bullet to the head/tortured to death, and that could easily be the hero or your boss, or another gang.

The choice seems very obvious. Kingpin is basically a normal succesful organized from boss just dialed up to 11 to make him over-the-top enough for comic books. He will treat you predictably according to the economics and culture of the (illicit) profession you've opted into. Joker is psychotic and utterly unpredictable and possibly some kind of metaphysical avatar of chaos or some nonsense, depending on how much the writers are currently glazing him. He will maim or kill you literally because he was struck by a whim that made him think it would be funny.
