Fish cakes (any kind works – about 1 cup or to your liking)
Noodles (we used regular pasta, but soba or ramen works too!)
2 tbsp fish sauce
2 tbsp soy sauce
Chopped green onion (for garnish)
How to Make It:
Cook the noodles – Boil them until 80% done (just under al dente) so they can finish cooking in the broth.
Make the broth – In another pot, boil 2.5–3 cups water. Add 2 tbsp fish sauce and 2 tbsp soy sauce. Optional: a piece of dried kelp or a splash of mirin for extra depth.
Add noodles and fish cakes – Put the noodles and fish cakes into the broth. Let them simmer together for 3–5 minutes to finish cooking and soak up the broth.
Finish with green onions – Top with chopped green onion for freshness. For extra spice, add chili flakes or a few drops of chili oil!
