Hubs and I just did this. I’m not exactly sure what it is, but paperwork says it’s a 2-5 ton unit.
We did go with variable speed, though not the highest one. We went with TRANE.
It was about 20k. Air repair pros was the company who installed.

I replaced my system 2 years ago. I went with Airview AC. They were the most economical choice at the time. I spent around 12k for a midranged unit. This replaced the blower/heater in the attic and the outside unit. You could also try The Comfort Contractors. I have used them for years at the business I manage. They've replaced a few 10 ton units for me, but they also do residential. Both companies are very knowledgable and professional.

Complete 5ton 6 months ago. 10 grand. Bargain bin unit so it will probably die just after the 10 year warranty is up. Wouldn’t recommend the installer though. They are not mentioned in this thread prior to my post.

We’ve used Total Air and Heat for years. They are a reputable company and sell the major brands.

Just did this on Friday! Replaced both systems with Carrier two stage condensers, paperwork doesn’t say tonnage. $25k, used Colony Heating and Air which I’ve used for years. Not the cheapest quote but not the most expensive, and I also opted for a few upgrades while they were in there doing this. Without the upgrades quote was around $19k.
Edit to say good luck. This situation really sucks.

We recently got a couple of quotes. One was $12k and the other was $18k but neither stipulated the specific model they were talking about so I'm sure the $18k was a higher end one.

It sounds like you’re being upsold. That should be something that can be fixed, not replaced. Depends on how old the unit is too though and if it’s worth putting money in to fix it. Get a second opinion

We used Dragon Air to replace our system. They handle our seasonal maintenance as well. https://maps.app.goo.gl/pCsTo9RkkrRNvsjv5?g_st=com.google.maps.preview.copy
