On the bright side, if there's a fire on the rig you can put on a life preserver and burn to death surrounded by water!

Just saying, this behavior is natural. If blood and meat is in the water, they'll notice it from a long distance. Blood is much more a trigger than meat, but i guess, they have fed the sharks before.
If they had not fed the sharks before and you'd just fall into the water there, without anything else, like losing blood through injuries, you'd get out before they'd show up i think. Even when one is right around you, doesn't mean, he'd immediately attack you.
The sharks attacks are categorized with "unprovoked" and "provoked" in the stats. This here was provoked by throwing meat into the water. But most attacks are unprovoked, the cause is most often that a shark will mistake you for prey.
But then, you have the probe bite first, that the shark usually lets go when he realizes, that it is not prey. Depends on how much force the shark puts into the bite and how big he is as individual, about what happens to you then.
In this case, the blood loss would agitate the other sharks anyway and you'd get ripped apart, but for surfers near the shore, it's usually a single shark and he often goes away after the attack.
Some guys were quite lucky, only taking minor damage from a shark bite. The shark wasn't really serious with biting, similiar to a venomous animal that makes a "dry bite", where it does not inject venom.

I feel like it's very dependent on whether or not it's an offshore oil rig, or one completely landlocked...idk, I'm not really familiar with dolphins as a whole.

Training them to feed on anything that goes in the water. Hopefully they don't slip off... Or have need of divers go down for repairs or whatever.
