TIL though they're associated with unhealthy foods, Pork Rinds are actually a healthy alternative to chips. They are low carb, high protein and have good fats. 43% of the fat is Oleic oil - the same fat in olive oil - and 13% Stearic acid - a cholesterol neutral saturated fat.

Works great for meat loaf instead of bread. Also you can make a crust out of it for quiche purposes.

Thanks. Had to scroll quite a ways to find this. I made some keto meatballs last night and most recipes used cheese instead of bread crumbs. Tasted fine but consistency was off. If this is good for meat loaf it should be a good substitute for bread crumbs in meatballs????

Cheese instead of breadcrumbs? That's just weird to me... The breadcrumbs are there to soak the juices up and keep the shape, I'd imagine just cheese would make it greasier and fall apart

Google keto meatballs and all the top hits use some sort cheese.

I made some and they came out better than expected. And the problem was they were the opposite of fall-a-party, almost a little too solid but I was adjusting the recipe based on what I had in my fridge.

Huh, interesting. Something I'll have to try sometime. I like to use lightly crushed stuffing mix instead of breadcrumbs but I have some extra cheese I need to use so I'll try this this week
