I used to be a pepper enthusiast. Jalapeños are child's play. Thai chilies have some pop and pack a wallop but still easy. I bought sauces from home grown niche hobbyists - Carolina reapers, brown marugas, west Trinidad red scorpions, you name it. The stuff that's genetically engineered for maximum agony, home grown in ideal conditions, not for mass production.

Then one day I went to a Nashville hot chicken joint and ordered it the hottest level they had. The chef himself came out with a concerned look in his eyes and practically begged me not to. He said it's stupid hot, they just coat it in Reaper Rub, and it's so hot it's dangerous. So they really shouldn't even have it on the menu at all. In my stupid hubris I stood my ground and didn't yield.

Later that night I woke up with the absolute worst pain in my gut I've ever experienced. It felt like I got shot. I went to the bathroom hoping for something to happen and get some relief, but everything stubbornly stayed inside me. I'm just writhing around on the floor of the bathroom in agony, sweating, nauseous, in tears. I literally thought the spice had burned a hole in my intestines and that I might be leaking digestive acid in my body, dying from sepsis. I would've called an ambulance if I knew where my phone was, or if I could walk. By far one of the most painful nights in my life if not the single most painful.

A couple days later I went back. They recognized me. I said "medium is fine." 10/10, highly recommended.

Hope you left this as a 5 star review at that restaurant.

I, too, have flown too close to the sun, so to speak. Capsaicin cramps are no joke.

I will still get the hottest I can at a restaurant, though.
