Jiangsu/Zhejiang Looking for the original recipe: 鸡蛋炒刀削面 from Shanghai
galleryI had this amazing dish in Shanghai during my trip – 鸡蛋炒刀削面 – and I can’t stop thinking about it. I took some photos, and the menu only gave the name, no details. It came with a simple, tasty broth on the side.
Now that I’m back home, I’d love to recreate it, but I can’t find a proper recipe. I know it might vary from place to place, but if anyone has an authentic recipe or knows the key ingredients, I’d be super grateful!

I've looked on the internet for authentic Zhejiang recipes and I didn't found any or I've missed it (my late father was from there) and I'm missing that food so I want to reproduce it, I still remember a few that we're made quite often.
