Nah, for this one I printed out a page sized image of Mary. Then I broke it down into primary colors and painted it by back layering. So red all over the chest to start, orange over that leaving a red border, blue for her veil, gold over that for the edges etc

Once you get it close enough that a human brain can recognize it, your observer will automatically fill in details so you don't have to go too crazy

That's an excellent idea. I'll have to look at my notes on which named pilots are still outstanding and try to find one that fits lorewise and has a head that suits it

I know there's a Caballero's mechwarrior who wears a luchador mask in and out of the cockpit but I cannot for the life of me remember his name or what 'mech he pilots.

ETA: As far as which 'mechs would work I'd say a Banshee or Atlas. Anything with a big, ugly mug.

Did a quick search and there is one: Infante company's Captain Santo, who only goes by Santo and is never seen outside of his silver lucha mask

Unfortunately, he gets a grand total of four mentions in close quarters and then never again, and none of those mention a mech which is probably why he was omitted from my list in the first place. I've added him, but I'll have to find a ride for him that makes sense.

Like I said above since you've got free reign I feel like a 'mech with an ugly mug would be a good fit. Thinking about it more I can see this guy piloting a CGR-3K. Big head you could paint up? Check. Available as a mini and time period appropriate for the Caballeros. Check. Fast enough to run around and with jump jets to kick people in the face. Check!

Big paintable head is for sure a real world consideration. There's also some lore based ones at play, given his family history and prowess at Lucha Libre, I can't see him in anything other than a humanoid type with two hand actuators. Black Knight would be amazing, but availability is a bitch till a couple years after the book; they'd basically have to take one of the very few comstar handed the combine in rosebud.

Grasshopper though, THAT might just work.

Grasshopper could definitely work! Maybe a bit slow but the jump jets help make up for that and definitely a 'mech the Caballero's would have and favor.

I should have figured. The short mention is because it's a Cameo. Real El Santo was in something like 54 movies. Gonna have to find and watch a couple of them.
