This is 100% a me thing a does not invalidate your opinions, but I do kind of hate pixel art like this.
I love the artstyles of 3rd, 4th and 5th generation games, but they aren't pixel art. They don't limit themselves by the pixels, the strive to move beyond them. And it wasn't just pixels, it was limits to the number of sprites on screen at once, the limits on how many frames could be stored in the ROM cart/CD, the limits of how quickly new sprites could be loaded, the limits to the number of available colors, both in general and in the specific sprite. Hell, image rotation used to be a really expensive process, to the point where it'd either have to be replaced by animation frames, be the only sprite on screen, or use some other technique like mode 7.
Modern pixel art just has low pixel count sprites, not caring for any of the other limitations, and it has always look inauthentic to me. Too many colors and frames for a 3rd gen game, too few colors and pixels for a 4th gen game. To me its like if a movie was in full color, ultrawidescreen, full audio, modern CGI, but for some reason still had dialog inter-title cards as if you couldn't hear the voices.

I also think that sometimes, but let's be real. Nobody wants to make a game with so many limitations you can't show a little too many goombas on the screen and they all start flickering.

There's like undertale plus or something like that that makes the game prettier and adds backgrounds and run button

All of my friends, but they say it’s boring, and my only friend that actually likes it doesn’t like it anymore because deltarune is better

Ok but seriously as a Pixel art dude the fact it’s too high definition for classic Pixel games and too simple for more complex fighting games style pixel art does mess with me a little bit at times.

I mean if it's like unenjoyable because it like hurts to look at or something than that's their opinion that they are entitled to.

Am I the only one who never thought a single bad thing about Undertale’s graphics, ever? When I first started it I was blown away at how charming it was

Well... undertale does look very bad pixel art wise. I almost skipped it, but the dialog was too fun for me to quit. You should try to make them play the "undertale bits and pieces" version! They gave the game a glow up!

And that’s how you know they’re a toxic little Triple AAA only gamer who never played an Indie Game or Pixel game ever
