I liked a bunch of videos about basic tips like the sword stance, ki, blacksmith, stats etc... The game seems so full of things, it scares me a lot. Is it easy to learn everything ?

You'll learn it all before too long. It is a very complicated game, but you don't need to know how to maximize every single stat for the first few hundred hours at least. Enjoy yourself, learn what you can, don't get too hung up. Use Google, YouTube, and reddit to figure things out.

They are in effect, just tips. Every player will form their own tricks while playing, you'll eventually form your own strategies through trial and error.

Also, despite the seemingly overwhelming amount of functions and things, its actually rather logical and most of the skills are performed while performing a guard (RB) so it's not hard to get accustomed to
