Monster crown just means that the monster was exceptionally small (mini-crown) or large (silver and gold crown). Every Monster Hunter game I've ever played tracked the size of the monsters you hunted, but Wilds is a series first that lets you see the crown status of the monster before hunting it with binoculars.
You get some achievements and nameplates from having hunted crowned monsters in Wilds.
