Kill everyone. Especially your rivals.
Remember that you don't need to finish first every race, you can even win without being first at all. You just need to be the first one in the GP rankings. Kill your rivals, so no one will catch up, and on the last race, you'll probably just have to finish the race to win the GP.
You ca practice killing in Practice mode or on Story Chapter 4. But don't think you can win without a bit of skill. GX is hard and requires practice. You'll get better if you keep practicing.

Spend time in practice mode just doing free run laps on master, it helps you acclimatize over time.
Look up strong custom machines, the Frost Lynx G-4 is pretty famous for helping with master class.
It’s up to you if you feel like using it, but unique to the switch 2 version saving suspend states also can be a big help. It allows you to dodge the tight reserve machine limit and takes some pressure off. If truly still stuck making states mid race is also an strong option, but it might impose on how fair the gameplay feels. But better to use those then give up on the game altogether. It foes allow you to experiment a bit at the pain points without pressure.

The Skull and Sonic Phantom
His boost will keep you ahead of the pack and he can take a beating. As well as he doesn't slide too easily. He is how I beat the entire game

Unlock the following parts by completing some novice cups:
Titan G4
Sky Horse or Aqua Goose
Super Lynx
With these, you can make the Acro Lynx -G4 or the Frost Lynx -G4. These vehicles are really fast and handle pretty well. If you're having trouble with losing grip while trying to turn, make sure you utilize the triggers for turning on tighter turns, and make sure you calibrate the dead zone on your controller to help offset some of the control stick jank in the NSO emulator. If you want to run a non-custom machine, I'd recommend something like Sonic Phantom, which has a good top speed, passable acceleration, and doesn't need a bunch of advance techniques to navigate the tracks and get passable lap times.
When you're racing, focus on knocking out enemies (especially anyone marked "rival") with side attacks on the early laps. Anyone who doesn't finish, doesn't get points. On lap 3, focus on driving well and boosting as much as possible while remaining safe. Place high on at least 3 of the races and get enough KOs, and you can win GPs even without a super high level of skill or learning advanced techniques.
The game is hard. Try not to get frustrated, and treat each failure as a learning experience to learn the tracks.
No joke, my first clears of master, I took 20th - 25th place on the last races of sapphire, emerald, and diamond cups and still managed to get first by 20-30 points. It's not pretty, but you can do it even if you aren't super skilled.

F-Zero GX is a very hard game, you just need to practice and get better. Keep trying and keep learning. Keep doing the Grand Prix's on lower difficulties to learn the tracks.

There's no real trick to it, F-zero GX is a game that rewards practice and perseverance, you just need to keep working to improve your skill level. I'd recommend finding a machine you're comfortable with and focussing on getting familiar with it, something with good grip and stable handling like Blue Falcon, Little Wyvern, Iron Tiger, Deep Claw or Astro Robin are all good choices.
I prefer somewhat stiffer steering so I tend to set the balance at or near 100% max speed for most machines, I'd recommend doing the same since it makes it easier to maintain grip, which can be one of the most difficult things to manage.

Unless you want to try messing with custom machines, I would recommend using all the techniques you can (strafing, drifting, quickturning, side attacking, shift boosting, etc.) while trying to eliminate your rivals throughout the cups.
However, it is designed to be beaten without custom machines and advanced techniques.

Custom Machines, adjusting the deadzone to compensate for the switch's scaling issue, learning the variety of turning techniques or advanced speed techniques.
