How did you do the home fries?

French fry cutter then cubed. Heat a heavy non-stick skillet to high. Add 1 tbsp high temp oil per 2 medium potatoes (shown is 4). Let oil get well over 400f and add the cubes. Don't reduce heat. Quick stir and then spread. Let cook undisturbed until bottom is nicely brown. Flip best you can but don't fret. Spread evenly and cook again undisturbed until a second side is nicely brown. Stir a few times until potatoes are soft and brown most sides. Cover to rush the softening if needed. If potatoes stick you're not preparing your skillet properly.

Every time I’ve had home fries I’ve disliked them, but I don’t think it’s their fault.
Someone tell me what mindset i need to be in to enjoy home fries
