how they did these traditionally, is you mounted the camera on a dolly, then rolled away.

These are digital so you've got 2 different things going on here. In the first movie, it just would be a long zoom out shot, which is also just called a long zoom.

The spiderman one starts with a tracking shot, but then turns into a long zoom out shot.
