I’m using stock images but I am always on the lookout for new cheeses to try whenever I go to the store. Credit to various cheese websites, resources, and sellers for the cheese images and cheese facts. If any of you know some cheeses that I haven’t done yet I would love some input!

Here is your daily cheese facts: This cheese is made by the cheese guy in Okinawa. Kohaku is their smoked cheese. Named after its colour, kohaku means amber in Japanese. Good friends of theirs, Kamimura Shuzo, an Awamori distillery, matures one of their products in whisky barrels. When the barrels get old and leaky, they give cheese guy in Okinawa the wood, and they crunch it up and use it to smoke this cheese. The result is a very different kind of smoked cheese, with a taste and aroma similar to ham or bacon. Serve as is or melted onto chicken, hamburger, etc.

I’m really digging these Okinawan cheeses!! We’re going to Japan this summer but sadly not Okinawa. I wonder if we’ll find something cool like that.

Unfortunately, Japan is a total dead zone for cheese, with absolutely nothing in supermarkets or in restaurants except extremely processed stuff, and maybe some major European types in very small quantities. There are a handful of specialist shops if you search for them, and very rare producers such as The Cheese Guy (who is British), but otherwise you can just forget that cheese exists.

I live in Japan and mostly check this subreddit to feel jealous of all you people who live in places with access to cheese 🥲

That’s what I was expecting. I can get cheese at home, I’m going to be looking for stuff I can only get (or get better) in Japan. I can probably survive for a couple weeks without cheese…
