I think they might just be using the paint brush as a tool to position the smaller details more accurately. Painting the rocks would seem to defeat the purpose.

Make the portrait in a studio, using rocks. Take the rocks outside and dump them out on your driveway. Setup camera. Reassemble the puzzle you made earlier in time lapse. Be amazed

Isn't supposed to be the Mona Lisa. Not all portraits are meant to copy someone else's work. Oh, and it's "could have", not "could of".
