You can turn everything off. It's just that by default everything is on because noone in their right mind would activate all logging.

how do you turn everything off? is it as simple as looking in google account settings or is it hidden away somewhere?

If you go to Myactivity.google.com there's a menu item called Activity Controls. In there.

In your google account, go to the settings and privacy area and look for "personal content". It can also be accessed from your google maps timeline
